I think the truck frame is easier to work with because Blazer/Jimmy frame rails are different on the two sides of the vehicle and may be more limiting to rear travel. Think about where you want your fuel tank or cell also (different in truck vs. suv).
7" used to be decent, but is less than the newer cars (Subies around 10"). Goes back to if your are building a budget rig for fun or trying to be competitive.
I agree on not changing wheelbase if you are building a reg cab short box, not worth the hassle.
Keep in mind big guys often don't fit in reg cab mini trucks once the cages are added.
Be sure to clear you plans with scruitineers before spending any time or money. Rules change all the time and they are the one most on top of things.
