First welcome.
While folks here have strong opinions about nearly everything, this is a decision that it almost entirely up to your preference, as it should be.
Pick whichever one you like best and enjoy driving it.
See you at Sno*Drift in a couple months?

Um, patience, grasshopper.
Personally, I'd go with the one with the least rust. But that's because I can fix mechanical things and I hate bodywork............
And, if you have rust in one place, you have it in lots of other places - some structural.

press on,
I'd suggest volunteering to work Sno*Drift. You'll get to talk to lots of rally people and see the rally up close.

Knowledge base (and parts) for the VW and the Subie are pretty strong. Less so for the Escort. Only a few Escort people but they're out there. As Jimmy said, the rust is a real issue on the Subie. That leaves the VW as the best of what you've got. Or go car hunting.
SNO*DRIFT is just a quick trip up US27/I75.

I would personally lean towards the GTi. Bodywork is a pain and requires more space than mechanical work.

If you get a car before December 4th, the Detroit Region SCCA has a rallycross at the Calhoun County Fairgrounds in Marshall Michigan. You can check out information on the MyAutoEvents.com web site. The course is mostly on the horse track so it is not a car buster.
Car does not need a cage and there are loaner helmets available. If you just want to come and watch, that is fine, too.
Otherwise, hope to see you at Sno*Drift.

AND Marshall has Dark Horse Brewery!
Shoot, I should do that!

Escort GT should be on the Mazda B platform, no? Lots of options there for a car, suspension, engine and transmission-wise. And junkyard parts should be plentiful.
